Mexican Night

What you'll need:
2 pounds of EXTRA LEAN ground turkey
2 tablespoons EVOO (extra virgin olive oil)
1 1/2 onion
1 pound mushrooms
3 tomatoes
2 avocados 
1 bag shredded lettuce
1 cup of  plain greek yogurt- optional
1 green pepper
1 bag of shredded mexican cheese (low fat, whichever you prefer- optional)
Fresh salsa

Taco Seasoning:
2 teaspoons Onion Powder
1 teaspoon Ground Cumin
1 Tablespoon Chili Powder
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon ground oregano
(Your favorite LOW SODIUM Mexican taco seasoning)

****I doubled the taco seasoning recipe for 2 pounds of ground turkey.

Directions:
Throw an onion, mushrooms, ground turkey in a skillet and two tablespoons of EVOO- cook until the turkey is browned. Add your taco seasoning. 

In a separate bowl dice two avocados, two tomatoes, 1/2 onion, green pepper, and seasoning slightly with dash of onion powder and black pepper. Throw in one pit from one of the avocados. (will keep it from turning brown)

Next just start layering- lettuce, ground turkey mix, avocado mixture, and top with tablespoon of Mexican shredded cheese, tablespoon of plain greek yogurt, and fresh salsa... ENJOY!
